Oktoberfestbier - When Brewery Meets Bakery

Every now and then, a collaboration comes along that just clicks.

It feels less like a partnership and more like two crafts connecting at the right moment.


That's exactly what happened with Oktoberfestbier, our special brew made with Lavonne Cafe, one of Bangalore's most loved patisseries led by Chef Avin Thaliath.


If you've ever stepped into Lavonne, you know what I mean. That first inhale - butter, caramel, freshly baked croissants, and maybe a hint of rye from the bread rack - it's pure comfort.

Now imagine capturing that moment in a beer. That was the challenge and the idea.



Where the Story Begins


When BLR Brewing Co began planning our Oktoberfest release, the goal wasn't to simply brew another Festbier.

We wanted to reimagine it and bring it closer to Bangalore's craft spirit - where local flavor, creativity, and collaboration coexist.


That's when Lavonne joined us.

Chef Avin and his team share a deep connection with detail. Whether it's a croissant or a pastry, precision meets playfulness in everything they make.








Brewed and Baked


This beer started in the bakery, not the brewhouse.

We worked with Lavonne to create a special pumpernickel rye bread baked exclusively for this beer. It's dense, aromatic, and rich in natural malt character.

We also added their iconic croissants, to enhance the malt base and create a soft, pastry-like mouthfeel.


The grain bill focused on Pilsner, rye, and caramel malts, with a bit of biscuit for rusk-like dryness and "fresh-from-the-oven" warmth.


A subtle layer of caramelized rye deepened the color to a burnished amber, while a handful of noble hops kept everything crisp, clean, and perfectly balanced.


It's a beer that smells like a bustling bakery - crust, spice, biscotti, and that comforting sweetness that lingers just enough.


In the Glass


When you pour a pint of Oktoberfestbier, the first thing you'll notice is its clear- amber color, tinged with reddish highlights from the rye and caramel malts.

The foam is thick and creamy, thanks to rye's natural proteins.


Take a sip, and here's what you'll experience in the flavors:

Front: Soft malt sweetness, like honey on warm toast.


Middle: Peppery rye spice, subtle caramel depth, and a hint of croissant butteriness.


Finish: Crisp and dry, with low bitterness and a touch of rusk snap.


At 6% ABV, it's smooth, balanced, and dangerously drinkable - rich enough to please malt lovers, but clean enough to keep you coming back for another.



Collaborating with Lavonne wasn't just about adding bread to a brew.


It was about creating a shared passion between brewing and baking - two crafts built on patience, fermentation, and respect for ingredients.

We didn't want Oktoberfestbier to be just a novelty.

We wanted it to feel like something you'd naturally choose - like reaching for a good loaf or a morning coffee.
